Carbón Ubud

Carbón Ubud is the first Bali outpost of MDA Restaurants' Jakarta grill, opened in 2026 inside Alaya Suites Ubud on Jalan Raya Pengosekan in partnership with Alaya Group. Chef Patron Andri Dionysius built the menu around a live fire grill, drawing on Mexico and Peru and linking them with Indonesian ingredients such as chilli, corn, cacao, tropical fruit and fresh herbs. Dinner offers a fire-led tasting menu that changes with the seasons, plus an à la carte list of Carbón favourites and Ubud-only dishes such as Nikkei ahi tuna tiradito and rockfish a la talla. Drinks include classic cocktails, wine and non-alcoholic pairings, and the hotel's Agave & Cigar Lounge offers more than 40 tequila and mezcal labels. The interior is warm and intimate, suited to romantic dinners and celebrations.
